  • 1 Tbsp olive oil
  • Kosher salt & black pepper
  • 3 Tbsp butter
  • 1 Tbsp chicken base
  • 4 Tbsp all-purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (optional)
  • Instant Pot Mashed Potatoes

Instructions

  1. Season the chicken breasts with kosher salt and black pepper.
  2. In a large skillet over medium heat, add olive oil and place the seasoned chicken in the skillet. Cook for about 5 minutes per side until the internal temperature reaches 165°F.
  3. Remove the chicken from the pan and set aside.
  4. Lower heat to medium-low, add butter and chicken base, stirring until melted.
  5. Sprinkle in the flour mixture, stirring to form a roux, cooking for about 30 seconds to 1 minute.
  6. Gradually pour in the chicken stock while scraping up bits from the pan, then add water and whisk until smooth.
  7. Let it simmer until thickened. If desired, stir in heavy cream.
  8. Shred cooked chicken (if preferred) and return it to the gravy along with any collected juices.
  9. Simmer together for a few minutes, taste, and adjust seasoning if needed.
  10. Serve hot over prepared mashed potatoes.
