  • 1.5 pounds beef stew meat
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 pounds russet potatoes (peeled & diced)
  • 1 tablespoon all-purpose flour
  • 3 cups chicken stock
  • 1 cup cheddar cheese (freshly grated)
  • 3/4 cup heavy cream

Instructions

  1. Prepare ingredients: Dice the onion, mince the garlic, and peel and dice the potatoes.
  2. Sear the beef: In a large pot over medium-high heat, add oil and sear the beef until browned on all sides; remove from pot.
  3. Cook onions and garlic: Sauté diced onion until softened; add minced garlic and cook until fragrant.
  4. Add flour and broth: Stir in flour, then gradually pour in chicken stock while scraping the bottom of the pot. Return seared beef and add diced potatoes.
  5. Simmer: Cover pot and reduce heat to low; let cook for about an hour until beef is tender.
  6. Finish with cream and cheese: Remove from heat, stir in heavy cream and cheddar cheese until well combined.
