  • 4 sheets puff pastry
  • 1 cup canned plain pumpkin
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 teaspoons water
  • Coarse sugar (optional)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together 1 large egg and 2 teaspoons of water for the egg wash.
  3. In a large bowl, mix together the pumpkin, sugar, and pumpkin pie spice until smooth.
  4. Divide the pumpkin mixture among the puff pastry sheets, spreading it evenly.
  5. Roll each pastry over the filling and cut down the center of each rolled pastry without cutting all the way through.
  6. Twist both pieces together with the filling side facing up and form circles by bringing both ends together.
  7. Brush with egg wash and sprinkle coarse sugar if desired.
  8. Bake for 30-35 minutes until golden brown; cool slightly before drizzling with a glaze made from powdered sugar, milk, and vanilla extract.
