  • 1.3 lbs ground turkey
  • 6 small links chicken sausage
  • 1 sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 can cannellini beans (15.5 oz)
  • 1 can red kidney beans (15.5 oz)
  • 1 can pumpkin purée (29 oz)
  • 1 can diced tomatoes (28 oz)
  • 1 bottle pumpkin beef broth (12 fl oz)
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 tsp brown sugar
  • 1/2 tsp cayenne pepper (optional)
  • Sea salt and pepper to taste

Instructions

  1. Prepare the sausages by slicing them or removing them from their casings.
  2. In a large heavy-bottomed pot, heat 2 tablespoons of olive oil and sauté garlic and onion until translucent. Add diced peppers and cook for another 5 minutes.
  3. Add another 2 tablespoons of olive oil to the pot and brown the ground turkey along with chicken sausage for about 10 minutes. Season with sea salt and black pepper.
  4. Return the sautéed vegetables to the pot; add tomatoes, pumpkin purée, beans, and spices. Pour in both broths and stir well.
  5. Simmer on low heat for 1.5 to 2 hours, stirring occasionally and adjusting seasoning as needed.
  6. Serve hot in bowls garnished with cheddar cheese, green onions, and sour cream.
