  • 1/4 cup packed brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 9 tablespoons unsalted butter (divided)
  • 3/4 cup unsweetened pumpkin puree
  • 1/3 cup buttermilk

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet by spraying it with nonstick spray or lining it with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, salt, and baking soda. Cut in 1/2 cup of butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, combine pumpkin puree and buttermilk. Add this mixture to the dry ingredients and stir until just moistened.
  4. Turn the dough onto a floured surface and knead gently for about 8-10 times. Pat or roll out the dough to about 1-inch thickness and cut into biscuits using a floured cutter.
  5. Place biscuits on the prepared baking sheet about an inch apart. Bake for 18 to 22 minutes until golden brown.
