  • 1 yellow onion (diced)
  • 10 cloves garlic (minced)
  • 1 lb carrots (peeled and diced)
  • 2 large russet potatoes (peeled and diced)
  • 32 oz vegetable broth
  • 2 cups finely diced broccoli florets
  • 8 oz yellow sharp cheddar cheese (freshly grated)
  • 2 cups milk
  • 2 tablespoons all-purpose flour
  • Salt (to taste)

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the diced onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the diced carrots and cook for an additional 5 minutes.
  4. Pour in the vegetable broth and add the diced potatoes; bring to a boil, then reduce heat to simmer until potatoes are tender.
  5. In a separate bowl, whisk together milk and flour until smooth; gradually add this mixture to the soup.
  6. Add the broccoli florets and simmer for another 10–15 minutes.
  7. Stir in grated cheddar cheese until melted; season with salt to taste before serving.
