  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, and brown sugar. Beat in eggs, vegetable oil (or melted butter), and vanilla extract.
  4. Gradually add the dry mixture to the wet ingredients until combined. Fill muffin tins about 3/4 full with batter.
  5. In another bowl, beat cream cheese until smooth and mix in additional sugar, egg yolk, and vanilla extract until well combined.
  6. Top each muffin with cream cheese mixture and gently swirl with a toothpick.
