  • 1 pound turkey turkey kielbasa (cut into ½ inch pieces)
  • 2 garlic cloves (minced)
  • ½ cup yellow onion (finely diced)
  • ½ cup carrots (peeled and finely diced)
  • ½ cup celery (finely sliced)
  • 4 cups chicken stock
  • 1 ½ pounds potatoes (cut into cubes)
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • Kosher salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add turkey turkey kielbasa pieces and cook until browned (5-6 minutes). Remove with a slotted spoon.
  2. In the same pot, sauté garlic, onion, carrots, and celery for about 2 minutes until softened.
  3. Pour in chicken stock and add cubed potatoes. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes or until potatoes are tender.
  4. Stir in the cooked turkey turkey kielbasa, heavy cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low for an additional 5-10 minutes until cheese is melted.
  5. Garnish with chopped parsley before serving.
