  • 3/4 cup superfine sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream
  • 1 pound fresh strawberries
  • 2 tablespoons granulated sugar

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In an electric mixer, beat egg whites until foamy. Add cream of tartar and continue beating until soft peaks form. Gradually add sugar, beating until stiff peaks form. Mix in vanilla extract.
  3. Spoon meringue into dollops on the prepared baking sheet and bake for 1.5 to 1.75 hours until crisp.
  4. For the whipped cream, mix heavy cream, vanilla extract, and sugar in a chilled bowl; whip until stiff peaks form.
  5. Puree one-third of the strawberries; mix with diced strawberries and sugar in a separate bowl.
  6. Break cooled meringues into pieces and fold them gently with the whipped cream and strawberry mixture before serving.
