  • 3 bell peppers (halved)
  • 1 lb ground chicken
  • ⅔ cup uncooked white rice
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • ½ cup cherry tomatoes (quartered)
  • ½ cup kalamata olives (chopped)
  • ½ cup feta cheese (divided)
  • Fresh dill (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to package instructions.
  3. In a skillet, heat olive oil over medium heat. Add ground chicken, salt, and pepper; cook until no longer pink.
  4. Stir in Italian seasoning, onion, garlic, and zucchini; cook for an additional two minutes.
  5. Combine cooked rice with chicken mixture; add tomatoes, olives, half of the feta, and dill.
  6. Stuff each pepper with the mixture and place in a baking dish. Sprinkle remaining feta on top and add water to the dish.
