  • 8 chicken tenderloins
  • 1/2 tablespoon lemon pepper seasoning
  • 3 cups chicken broth
  • 1/2 sweet onion, finely diced
  • 2 teaspoons minced garlic
  • 1 cup uncooked long-grain rice
  • 10 oz can cream of chicken soup
  • 10 oz can cheddar cheese soup
  • Optional: 1/2 cup shredded cheese for topping
  • Optional: dried parsley for garnish

Instructions

  1. Pat chicken tenderloins dry and season with lemon pepper on both sides.
  2. In a skillet, heat oil over medium-high heat and brown the chicken on both sides until golden.
  3. Place browned chicken in a slow cooker. In a bowl, mix chicken broth, onion, garlic, rice, cream of chicken soup, and cheddar cheese soup; pour over the chicken.
  4. Cook on low for 3½ – 5 hours. Stir halfway through cooking for even results.
  5. Check that the chicken reaches 165°F and that the rice is tender before serving.
  6. Top with shredded cheese during the last 15 minutes if desired, garnish with parsley before serving.
