  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup Cornflakes or Special K cereal
  • 3/4 cup sweetened shredded coconut
  • 1/2 cup pecans, coarsely chopped

Instructions

  1. In a stand mixer bowl, cream together the egg, softened butter, brown sugar, granulated sugar, and vanilla extract until well combined.
  2. Add flour, oats, baking soda, and salt; mix on low speed until just combined.
  3. Fold in chocolate chips, Cornflakes, shredded coconut, and pecans on low speed until evenly distributed.
  4. Scoop dough into mounds on a tray and refrigerate for at least two hours.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Place dough mounds two inches apart on the sheet; bake for about 10 to 12 minutes until edges are set but tops are glossy.
  7. Cool on the baking sheet for ten minutes before serving.
