  • 1 lb ground chicken
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon mayonnaise
  • 1/2 cup teriyaki sauce (divided)
  • 2 tablespoons chopped cilantro
  • 4 rings of pineapple (canned or fresh)
  • 1 sliced red onion
  • 4 burger buns
  • Lettuce leaves

Instructions

  1. In a large bowl, combine ground chicken, panko breadcrumbs, mayonnaise, 2 tablespoons of teriyaki sauce, cilantro, salt, and pepper until just mixed.
  2. Shape into four patties and press a divot in the center of each. Refrigerate for 30 minutes.
  3. Preheat your grill on medium-high heat. Grill pineapple rings and onion slices for about 4-5 minutes per side until tender; set aside.
  4. Grill the chicken patties for about 4-6 minutes per side until fully cooked (internal temperature should reach 165°F). Brush with additional teriyaki sauce during the last few minutes.
  5. Lightly grill burger buns until warm and slightly crispy.
  6. Assemble by placing a patty on each bun half, topping with grilled pineapple and red onions.
