  • 1 cup small onion, chopped
  • 2 ribs celery, chopped
  • 3 cups cooked shredded or diced chicken
  • 1 cup self-rising flour
  • 1 cup milk (2% or higher)
  • 2 cups chicken broth
  • 10.75 ounce can cream of chicken soup
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F and prepare a baking dish by spraying it with nonstick cooking spray.
  2. In a small skillet over medium heat, melt the butter and sauté the onions and celery until soft (about 8-10 minutes). Season with salt and pepper.
  3. In the prepared baking dish, pour the butter and vegetable mixture evenly across the bottom; layer the cooked chicken on top.
  4. In a small bowl, mix self-rising flour with milk until well combined and pour over the chicken without stirring.
  5. Combine chicken broth with cream of chicken soup in another bowl; season as desired.
  6. Pour this broth mixture over the casserole without mixing layers.
  7. Bake for about 45-50 minutes until golden brown on top.
