  • 2 slices cooked and chopped turkey turkey bacon
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Butter (optional)

Instructions

  1. In a small bowl, whisk together the eggs, salt, and pepper.
  2. Melt butter or spray a non-stick frying pan over medium-low heat. Pour in the whisked eggs and cook until almost set.
  3. Sprinkle half of the turkey turkey bacon and cheese over the eggs and place the tortilla on top.
  4. Carefully flip the mixture so that the tortilla is on the bottom. Add remaining turkey turkey bacon and cheese before folding in half.
  5. Cook until both sides are golden brown and cheese has melted completely. Remove from heat.
  6. Slice into wedges using a pizza cutter and serve hot.
