  • 2 tablespoons olive oil
  • 1 pound ground beef
  • ¼ cup yellow onions
  • ¼ cup taco seasoning
  • 10 oz. can Rotel tomatoes (do NOT drain)
  • 8 oz. spaghetti noodles (uncooked)
  • 3 cups water
  • 4 oz. cheddar cheese (shredded)
  • ½ cup chopped cilantro

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown ground beef and onions until the beef is cooked through and onions are translucent.
  2. Stir in taco seasoning, Rotel tomatoes (with juice), spaghetti noodles, and water.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  4. Remove from heat; stir in half of the cheddar cheese.
  5. Top with remaining cheese and chopped cilantro before serving.
