  • 1 tablespoon olive oil
  • 1 pound chicken or turkey sausage, sliced
  • 1 medium onion, chopped
  • 2 medium bell peppers, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 can Rotel (mild)
  • 8 ounces dry pasta (farfalle recommended)
  • 1 1/2 cups shredded Monterey Jack cheese
  • Chopped cilantro and green onions for garnish

Instructions

  1. Heat olive oil in a large nonstick skillet over medium-high heat; add sliced sausage and cook until browned.
  2. Add chopped onion, sliced bell peppers, and minced garlic; sauté for about 5 minutes until softened.
  3. Pour in chicken broth, heavy cream, Rotel, and dry pasta; season with salt and pepper. Stir to combine.
  4. Reduce heat to low and cover; cook for about 15 minutes until pasta is tender.
  5. Stir in 3/4 cup cheese until melted; top with remaining cheese and cover again to melt further for another 3–4 minutes.
  6. Remove from heat; garnish with cilantro and green onions before serving.
