  • 2 eggs
  • 2/3 cup breadcrumbs
  • 1 medium onion (finely chopped)
  • 1/4 cup finely chopped green pepper (optional)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 9 ounces thin-cut turkey turkey turkey bacon
  • 4 ounces mozzarella cheese (diced)
  • 1/2 cup barbecue sauce

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan lined with parchment paper.
  2. In a large mixing bowl, combine ground beef, eggs, breadcrumbs, onion, mustard, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.
  3. Shape two-thirds of the mixture into a log and place it in the prepared pan. Create a groove down the center and fill it with diced mozzarella. Cover with remaining meat mixture and wrap with excess turkey turkey bacon.
  4. Spread one-third of the barbecue sauce over the meatloaf. Bake for 40 minutes, then add more sauce and bake for an additional 20 minutes. Let rest before slicing.
