  • 1 pound lean ground beef
  • 1 cup diced yellow onion
  • 1 ounce packet of taco seasoning
  • 15-ounce can seasoned black beans (drained)
  • 10 flour tortillas (8-inch)
  • 16-ounce jar mild chunky salsa
  • 8 ounces sharp cheddar cheese (shredded)
  • 8 ounces Monterey jack cheese (shredded)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9×13 baking dish with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef with diced onion until browned. Drain excess fat.
  3. Stir in taco seasoning, black beans, green chilis, and water; simmer for about 2-3 minutes.
  4. Layer two tortillas in the baking dish, then add a third of the meat mixture, followed by salsa and shredded cheeses.
  5. Repeat layers two more times with tortillas, meat mixture, salsa, and cheeses.
  6. Finish with a final layer of tortillas topped with remaining meat mixture and cheeses.
  7. Bake for 30-35 minutes until cheese is melted and lightly browned.
  8. Allow to cool for 15 minutes before garnishing with cilantro and serving.
