  • 2 cooked boneless skinless chicken breasts, shredded
  • 2 cups fresh or frozen vegetables (your choice)
  • 1/4 cup onion, chopped
  • 1 cup shredded cheddar cheese
  • 2 cups baking mix (such as Bisquick)
  • 1 1/2 cups milk
  • 1 1/2 cups rich chicken stock
  • 2 chicken stock cubes
  • 10.75 oz can cream of chicken soup

Instructions

  1. Preheat your oven to 350°F.
  2. Place butter chunks in a 9 x 13-inch baking pan and melt in the oven.
  3. In a large mixing bowl, combine milk and baking mix; set aside.
  4. Dissolve chicken stock cubes in liquid chicken stock; mix into cream of chicken soup until smooth.
  5. Assemble the casserole by layering shredded chicken, vegetables, chopped onions, cheddar cheese, baking mix batter, and finally the soup mixture without stirring.
