  • 1 red bell pepper, chopped
  • ½ head broccoli, cut into florets
  • 1 lb ground beef
  • 6 oz ramen noodles (discard seasoning packets)
  • ¼ cup soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 2 tsp Sriracha
  • 1 clove garlic, minced
  • Chopped scallion for garnish

Instructions

  1. In a skillet over medium heat, heat vegetable oil. Sauté onions, bell pepper, and broccoli until tender (about 5 minutes). Remove from skillet.
  2. Add ground beef to the skillet; season with salt and pepper. Cook until browned (about 5 minutes). Drain excess fat.
  3. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, Sriracha, and minced garlic.
  4. Boil water in a saucepan; cook ramen noodles according to package instructions (about 2 minutes). Drain well.
  5. Combine cooked noodles with beef and vegetables in the skillet. Pour in sauce mixture and toss everything together until well coated.
  6. Garnish with chopped scallions before serving.
