  • 3 to 4 cups shredded rotisserie chicken or cooked chicken breasts
  • 8 cups water
  • 4 tablespoons Better than Bouillon Chicken
  • 4 tablespoons salted butter
  • 4 carrots, diced
  • 4 celery stalks, diced
  • 2 small yellow onions, finely diced
  • 2 cups Bisquick
  • 1 cup milk (divided)
  • Seasonings: Italian seasoning, garlic powder, onion powder, salt

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté onions, carrots, and celery for about 5 minutes until soft.
  2. Add water and Better than Bouillon Chicken; stir well and bring to a boil.
  3. Shred your cooked chicken and add it to the boiling broth.
  4. Season with Italian seasoning, salt, garlic powder, and onion powder; stir thoroughly.
  5. In a separate bowl, mix Bisquick with ⅔ cup milk and seasonings until smooth.
  6. Drop spoonfuls of dumpling batter into the simmering broth and cover immediately.
  7. Cook for 15-20 minutes without lifting the lid until dumplings are fluffy.
  8. Serve warm with fresh herbs as a garnish.
