  • 2 pounds ground beef
  • 1 cup finely diced sweet yellow onions
  • 1¼ cup Thousand Island salad dressing
  • ½ cup ketchup
  • ½ cup pickle relish
  • ¼ cup yellow mustard
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh cracked black pepper
  • 2 cups freshly shredded mild cheddar cheese
  • 4 ounces Velveeta cheese (cubed)
  • shredded lettuce and diced Roma tomatoes for garnishing

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  2. Bake tater tots on the prepared baking sheet for about 10 minutes or until slightly crisp.
  3. Spray a 9×13 baking dish with nonstick cooking spray.
  4. In a saucepan over medium-high heat, cook ground beef and diced onions until the beef is no longer pink; drain excess oil.
  5. Stir in Thousand Island salad dressing (1 cup), ketchup, pickle relish, yellow mustard, onion powder, kosher salt, and pepper; mix well.
  6. Add shredded cheddar cheese (1 cup) and cubed Velveeta; stir until melted and combined.
  7. Spread the beef mixture evenly in the baking dish; top with remaining cheddar cheese.
  8. Arrange tater tots in a single layer over the cheese.
  9. Bake uncovered for about 50-55 minutes until bubbly and golden brown.
  10. Top with shredded lettuce, diced tomatoes, and drizzle with remaining Thousand Island dressing before serving.
