  • 2 tablespoons cornstarch
  • ¼ cup sugar (for glaze)
  • 2 tablespoons strawberry gelatin
  • ½ cup water
  • 1 tablespoon lemon juice
  • 3 cups hulled strawberries

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, ¼ cup sugar, and melted butter. Press into a 9-inch pie pan and bake at 350°F for about 8-9 minutes. Cool for 30 minutes.
  2. Beat softened cream cheese until smooth; add vanilla extract and powdered sugar. In another bowl, whip the cream to soft peaks and gently fold into the cream cheese mixture. Spread into the cooled crust and chill for at least 1-2 hours.
