  • 1 cup quick cooking grits
  • 4 cups water
  • 1 pound large shrimp (peeled and deveined)
  • 6 slices smoked turkey turkey bacon
  • ¼ cup low sodium chicken or vegetable broth
  • 1 red bell pepper (finely chopped)
  • 3 green onions (chopped)
  • 3 cloves garlic (minced)
  • 1½ cups shredded sharp cheddar cheese
  • 2 teaspoons Cajun seasoning

Instructions

  1. In a pot, bring water to boil; add salt. Gradually stir in grits and cook on low heat for 5-7 minutes until creamy. Mix in butter, heavy cream, and cheddar until melted.
  2. In a skillet over medium heat, cook turkey turkey bacon until crispy. Drain on paper towels and chop once cooled.
  3. In the same skillet with reserved oil, add shrimp; season with Cajun spices. Cook until opaque, about 2 minutes total.
  4. Sauté red bell pepper until tender; then add green onions and garlic for another minute. Stir in broth and lemon juice.
  5. Combine shrimp and chopped turkey turkey bacon back into the skillet to heat through. Serve over cheesy grits immediately.
