  • 25 ounces frozen cheese ravioli (thawed)
  • 34 cups vegetable oil
  • 1 cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • ⅓ cup whole milk
  • 1 cup Italian bread crumbs
  • ¾ cup panko bread crumbs
  • ¾ cup grated parmesan cheese (divided)
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Thaw the ravioli overnight in the refrigerator or by boiling briefly and patting dry.
  2. Set up three shallow dishes: one with flour mixed with salt and pepper, one with whisked eggs and milk, and the third with a blend of Italian bread crumbs, panko, and half of the parmesan cheese.
  3. Heat vegetable oil in a deep-sided skillet until it reaches 325°F.
  4. Dredge each ravioli in flour, dip in the egg mixture, then coat with the breadcrumb mixture.
  5. Fry ravioli in batches for about 2-3 minutes on each side until golden brown.
  6. Drain on paper towels and sprinkle with remaining parmesan before serving.
