  • 1 ¾ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • 7 tablespoons butter, melted
  • 32 ounces full-fat cream cheese, softened
  • 1 cup sugar
  • ½ cup sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 1 tablespoon lemon zest
  • 4 eggs, room temperature
  • 1 (21 ounce) can of cherry pie filling

Instructions

  1. Preheat your oven to 350°F and butter the bottom and sides of a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom and up the sides of the pan.
  3. Bake for about 10 minutes then let cool completely.
  4. Lower the oven temperature to 300°F.
  5. Beat together softened cream cheese and sugar until smooth. Mix in sour cream, vanilla extract, lemon juice, and lemon zest until well combined.
  6. Add eggs one at a time on low speed until just incorporated. Pour filling into the cooled crust.
  7. Bake for approximately 70 minutes; then turn off the oven and let it cool inside with the door slightly ajar for one hour.
  8. Transfer to a wire rack to cool completely before refrigerating for at least six hours or overnight.
  9. Before serving, remove from the springform pan and top with cherry pie filling.
