Ingredients

Scale
  • 1 lb ground beef
  • 1 small yellow onion, chopped
  • 1½ teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 4 tablespoons cream cheese, softened and cubed
  • ¼ cup sour cream
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded cheddar cheese
  • 8 (8 inch) tortillas (flour or corn)
  • Vegetable oil for frying

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Add the chopped onion halfway through cooking until soft.
  2. Lower the heat and stir in chili powder, smoked paprika, cumin, garlic powder, and oregano. Cook for about one minute while stirring. Mix in the cream cheese until melted, then remove from heat and blend in sour cream and shredded cheeses.
  3. Spoon a few tablespoons of the mixture onto each tortilla, roll tightly, and secure with toothpicks.
  4. Heat vegetable oil in a skillet or pot until hot. Carefully fry taquitos until golden brown on all sides, transferring them to a paper towel-lined plate.
  5. Serve warm with toppings like sour cream or salsa.
