  • 1 large clove garlic, minced
  • 1 ½ tablespoons rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 3 tablespoons sambal oelek
  • 1 teaspoon sriracha
  • ½ cup mayonnaise
  • 1 lb. shrimp, peeled and deveined
  • Vegetable or canola oil for frying

Instructions

  1. In a small saucepan, heat olive oil over low heat. Add minced garlic and sauté for about 1 minute. Stir in rice vinegar, soy sauce, brown sugar, sambal oelek, and sriracha; cook for 2 minutes.
  2. Combine cornstarch and water in a small bowl; stir into the saucepan and simmer until thickened (about 2 minutes). Remove from heat and let cool.
  3. In another bowl, mix mayonnaise with honey and cooled chili sauce; season with salt to taste.
  4. Pat shrimp dry with paper towels. Heat vegetable or canola oil in a skillet to 375°F. Dredge shrimp in cornstarch using a Ziploc bag.
  5. Fry shrimp in batches until golden brown (about 1–1½ minutes per side). Drain on paper towels.
  6. Toss cooked shrimp in the sauce and garnish with sliced green onions and red pepper flakes if desired.
