  • 2 bananas, sliced
  • 1 ¼ cups 2% milk
  • 1 cup whipping cream
  • ⅔ cup sugar
  • ⅛ teaspoon salt
  • ¼ cup cornstarch
  • 4 large egg yolks (room temperature)
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 1 cup whipping cream
  • 1 ½ tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • Additional bananas for garnish

Instructions

  1. Preheat your oven to 350°F.
  2. Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl. Press into a 9-inch pie dish to form the crust and bake for about 7 minutes until golden. Cool completely.
  3. Layer the bottom and sides of the cooled crust with banana slices.
  4. In a saucepan over medium heat, whisk together milk, whipping cream, sugar, salt, and cornstarch until it bubbles. Cook for about 2 minutes until thickened.
  5. Whisk egg yolks in another bowl, gradually adding hot mixture to temper them before returning to the saucepan to thicken further for another 2 minutes.
  6. Remove from heat; stir in vanilla extract and unsalted butter until smooth.
  7. Pour warm pudding over bananas in the crust and refrigerate for at least 4 hours.
  8. For topping, chill bowl and beaters before whipping cream with powdered sugar and vanilla extract; spread over pie before serving.
