  • 2 tablespoons light brown sugar
  • 2 tablespoons water
  • 2 tablespoons rice vinegar
  • ½ teaspoon sesame oil
  • 2 teaspoons cornstarch
  • lbs boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • 4 cups cooked white rice (jasmine or basmati)
  • 1 small crown broccoli, cut into bite-size pieces
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 green onions, sliced

Instructions

  1. In a small bowl, whisk together soy sauce, brown sugar, water, rice vinegar, sesame oil, and cornstarch; set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken pieces until golden brown and cooked through; remove and keep warm.
  3. Sauté broccoli and red bell pepper in the same skillet until crisp-tender; remove and keep warm.
  4. Lower heat and add garlic and ginger to the skillet; cook for one minute.
  5. Whisk the reserved sauce again before adding it to the skillet; stir until thickened.
  6. Return chicken to the skillet and mix well; sprinkle with green onions.
  7. Serve over cooked rice topped with chicken and vegetables.
