  • 8 ounces thin spaghetti or angel hair pasta
  • 1 lb large shrimp, shelled and deveined
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 pound asparagus, trimmed and cut into 1/2 inch segments
  • 4 large cloves garlic, minced
  • 2/3 cup sliced grape tomatoes
  • 1/2 cup white grape juice
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil water in a large pot, add pasta, and cook until al dente. Drain and set aside.
  2. Sauté the shrimp: In a skillet, heat butter and olive oil over medium heat. Add shrimp in a single layer; cook for about 1½ – 2 minutes on each side until pink. Remove from skillet and keep warm.
  3. Prepare vegetables: In the same skillet, add more butter and olive oil. Sauté asparagus for about 4-5 minutes until crisp-tender. Stir in garlic for an additional minute before adding grape tomatoes for another 30 seconds.
  4. Combine all ingredients: Pour in grape juice; let reduce briefly before returning shrimp to the skillet with lemon juice, parsley, salt, and pepper. Warm together for less than a minute.
  5. Serve: Plate the shrimp scampi over cooked pasta and top with freshly grated Parmesan cheese.
