One Pot Sticky Honey Lime Chicken brings together the zesty flavors of lime and the sweetness of honey in a quick and easy dish perfect for busy weeknights or casual gatherings.

Ingredients

  • 2 pounds shrimp 21/25 (cleaned and peeled)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • Knorr Selects Rustic Mexican Rice and Beans
  • 2 tablespoons red onion (minced)
  • 2 handfuls cilantro leaves
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lime juice
  • Pinch of salt and pepper to taste
  • 1 cup chopped pineapple

Instructions

  1. Combine rub ingredients in a mixing bowl. Toss shrimp until well coated.
  2. Heat a large skillet over medium heat with olive oil. Add chopped bell peppers once hot.
  3. Cook seasoned shrimp in the skillet for 1-3 minutes until starting to turn pink, then flip each piece.
  4. Continue cooking for another 1-3 minutes until fully cooked through.
  5. Remove cooked shrimp from skillet and place in a small bowl drizzled with sauce.
  6. Add rice according to package directions to the skillet with bell peppers.
  7. During the last five minutes of cooking rice, return shrimp to the skillet.
  8. Make pineapple chimichurri by blending cilantro, olive oil, lime juice, salt, and pepper; combine with chopped pineapple and minced red onion in a bowl.
  9. Serve warm in bowls topped with additional chimichurri sauce.
