  • 1 lb lean ground beef
  • 1 chopped onion
  • 2 ribs chopped celery
  • 2 peeled and chopped carrots
  • ½ teaspoon dried oregano
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried basil
  • 6 cups low-sodium beef broth or vegetable broth
  • 2 large red or Yukon gold potatoes cut into small cubes
  • 1½ cups trimmed and cut fresh green beans
  • 1 (15 ounce) can drained corn
  • 1 (15 ounce) can fire-roasted tomatoes
  • Kosher salt and black pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add ground beef, breaking it apart as it cooks.
  2. When the beef is halfway browned, add onions, celery, and carrots. Cook until the beef is browned and vegetables are softened, then drain excess grease.
  3. Lower the heat; stir in oregano, marjoram, parsley, thyme, and basil for one minute to enhance flavor.
  4. Add broth, potatoes, and green beans to the pot. Bring to a boil; then reduce to simmer for 15 minutes.
  5. Stir in fire-roasted tomatoes and corn; simmer for an additional five minutes until everything is tender. Season with salt and pepper before serving.
