  • 1 lb chicken Chicken Italian sausage
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 6 cups low-sodium beef broth
  • 810 uncooked lasagna noodles broken into bite-size pieces
  • 8 ounces whole milk ricotta cheese
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tablespoon chopped fresh Italian parsley

Instructions

  1. 1. In a large skillet over medium heat, brown the chicken sausage. Add chopped onion halfway through until soft.
  2. 2. Reduce heat and stir in minced garlic along with dried herbs (parsley, oregano, marjoram, basil, thyme) and red pepper flakes. Cook for an additional minute.
  3. 3. Transfer the mixture into a crockpot and add diced tomatoes, crushed tomatoes, tomato paste, and beef broth. Cover and cook on low for 4 hours or high for 2 hours.
  4. 4. After cooking time is up, stir in broken lasagna noodles and cover again. Cook on high for an additional 35–45 minutes until noodles are tender.
  5. 5. While noodles are cooking, mix ricotta cheese, mozzarella, Parmesan, and parsley in a bowl.
  6. 6. Serve soup hot, topped with spoonfuls of the ricotta mixture.
