  • 1½ cups heavy cream

  • 1½ tablespoons instant coffee

Instructions

  1. In a large saucepan, combine sugar, milk, heavy cream, and salt. Heat over medium until hot but do not boil.
  2. Whisk egg yolks in a bowl. Gradually add hot mixture to yolks while whisking to temper them.
  3. Return everything to the saucepan and cook over medium-low heat until thickened (170-180°F).
  4. Stir in vanilla extract and instant coffee; strain the mixture into a bowl and refrigerate until chilled.
  5. Churn in an ice cream maker according to the manufacturer's instructions, adding chopped chocolate near the end.
  6. Transfer to a freezer-safe container and freeze for at least six hours before serving.
