  • lbs boneless skinless chicken breasts or thighs, cut into bite-size pieces
  • ⅓ cup cornstarch
  • ¼ cup vegetable oil
  • 2 tablespoons Hoisin sauce
  • 2 tablespoons ketchup
  • ¼ cup low-sodium soy sauce
  • ¼ cup water
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons grated ginger
  • 2 tablespoons ground fresh chili paste (Sambal Oelek)
  • 1 red bell pepper, diced
  • 2 cups chopped broccoli crowns
  • ¾ cup roasted unsalted cashews

Instructions

  1. Coat the chicken pieces in cornstarch inside a large zipper bag.
  2. Heat vegetable oil in a skillet over medium-high heat and cook the chicken until golden brown on both sides. Remove and set aside.
  3. In a bowl, whisk together Hoisin sauce, ketchup, soy sauce, water, rice vinegar, brown sugar, ginger, and chili paste.
  4. In the same skillet, stir-fry diced red bell peppers and broccoli until crisp-tender.
  5. Add the cooked chicken back to the skillet along with roasted cashews and pour in the sauce. Stir gently and simmer for about 3–4 minutes.
