  • 2/3 cup granulated sugar (divided)
  • 2 1/2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon (divided)
  • 1/2 cup unsalted butter (divided)
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 375°F.
  2. Melt 1 tablespoon of butter in a 9×9 inch baking dish while you prepare the filling.
  3. In a large bowl, mix blueberries, 2/3 cup sugar, cornstarch, and lemon zest; pour into the baking dish over the melted butter.
  4. In another bowl, whisk together flour, remaining sugar, baking powder, salt, and cinnamon. Cut in the remaining butter until crumbly. Add buttermilk and stir until just combined.
  5. Spoon dollops of the biscuit mixture over the blueberry filling. Sprinkle with remaining sugar.
