  • ¾ cup low sodium beef broth
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons rice grape juice or rice vinegar
  • ½ teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1 to lbs beef steak (cut into thin bite-sized pieces)
  • 2 tablespoons vegetable oil
  • 1 medium onion (sliced)
  • 2 ribs celery (chopped)
  • 2 large carrots (chopped)
  • 8 ounces cremini or white button mushrooms (sliced)
  • 1½ cups snow peas
  • 2 cloves garlic (minced)
  • 1 can water chestnuts (drained)

Instructions

  1. In a medium bowl, whisk together beef broth, soy sauce, rice grape juice or vinegar, sesame oil, and cornstarch. Set aside.
  2. In another bowl, toss the beef with cornstarch. Heat vegetable oil in a large skillet over medium-high heat and brown the beef in batches. Transfer cooked beef to a plate.
  3. Add more oil if needed, then sauté the onion, celery, carrots, and mushrooms until tender. Stir in snow peas for the last minute.
  4. Reduce heat to low; add garlic and water chestnuts to the skillet and cook until fragrant.
  5. Return cooked vegetables and beef to the skillet, pour in the prepared sauce, bring to a boil while stirring until thickened.
