  • 12 pounds flank steak (cut into strips or 1-inch cubes)
  • 1 pound veined and peeled shrimp
  • 1/4 cup soy sauce
  • 4 cloves garlic (minced)
  • 6 ounces pineapple juice
  • 2 tablespoons coconut cream
  • 1 tablespoon olive oil
  • 1/2 teaspoon curry powder (up to 1 teaspoon per taste)
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sesame oil
  • 1 1/2 teaspoons rice vinegar
  • 2 tablespoons dark brown sugar
  • 1 cup coconut cream
  • 1/2 cup crushed pineapple and juice
  • 1/2 cup sour cream

Instructions

  1. In a mixing bowl, whisk together soy sauce, garlic, pineapple juice, olive oil, curry powder, red pepper flakes, cayenne pepper, ground ginger, sesame oil, coconut cream until well combined.
  2. Divide marinade into two ziplock bags; add beef to one and shrimp to the other. Seal tightly and refrigerate for at least 30 minutes (up to overnight for best flavor).
  3. Preheat your grill on high heat for about 5–10 minutes.
  4. Skewer the marinated beef and shrimp separately on grilling skewers.
  5. Grill beef skewers for about 2 minutes per side; add shrimp skewers after that and cook each side for approximately 3 minutes until opaque.
  6. Serve immediately with Pina Colada Sauce on the side.
