  • ½ cup brown sugar
  • ¼ cup salted butter (melted)
  • 1 (20-ounce) can sliced pineapple (drained)
  • 12 maraschino cherries
  • 1 ⅓ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • 1 large egg (room temperature)
  • ¼ cup sour cream
  • ¼ cup milk
  • ¼ cup pineapple juice

Instructions

  1. Preheat your oven to 350°F. Spray a 9-inch cake pan with cooking spray.
  2. In a small bowl, mix together the brown sugar and melted salted butter. Spread it evenly on the bottom of the prepared cake pan.
  3. Press the pineapple slices between paper towels to remove excess moisture. Arrange them in the bottom and sides of the pan, placing maraschino cherries in between.
  4. In a medium bowl, whisk together flour, baking powder, and salt.
  5. In a large mixing bowl, beat softened unsalted butter with granulated and brown sugars until fluffy, about 2-3 minutes.
  6. Add in the egg, sour cream, milk, and pineapple juice; mix until just combined.
  7. Fold in the dry ingredients until smooth.
  8. Pour batter over arranged pineapples and bake for 45–50 minutes or until golden brown and a toothpick comes out clean.
  9. Cool for 10–15 minutes before carefully inverting onto a plate.
