  • 12 slices day-old Texas toast (or 1 loaf of French bread), cubed
  • 2 (8-ounce) packages cream cheese, cubed
  • 1 cup blueberries (fresh or canned)
  • 2 cups milk
  • 12 eggs, beaten
  • 1 teaspoon vanilla extract
  • ⅓ cup maple syrup
  • 1 cup granulated sugar

Instructions

  1. Grease a baking dish with butter and spread half of the cubed Texas toast evenly across the bottom.
  2. Scatter half of the cream cheese cubes and half of the blueberries over the bread. Repeat with remaining ingredients.
  3. In a large bowl, whisk together milk, beaten eggs, vanilla extract, maple syrup, and granulated sugar until combined. Pour mixture over layered bread and fruit.
  4. Cover and refrigerate overnight to allow flavors to meld.
  5. Preheat oven to 350°F (175°C). Bake uncovered for about 30 minutes until golden brown on top.
  6. While baking, prepare topping by mixing cornstarch and water in a saucepan over medium heat until thickened. Stir in remaining blueberries until they burst slightly.
  7. Serve warm with blueberry topping drizzled over each slice.
