  • 7 large egg yolks (3 for crème brûlée topping and 4 for egg mixture)
  • ¼ cup granulated sugar (for crème brûlée topping)
  • 1 teaspoon vanilla extract (or vanilla paste)
  • 1 cup heavy cream (for egg mixture)
  • ½ cup milk
  • 1 16-ounce loaf of thick-sliced brioche bread
  • 3 tablespoons butter (for the griddle)
  • ⅓ cup granulated sugar (for brulee topping)

Instructions

  1. In a mixing bowl, whisk together heavy whipping cream, salt, egg yolks, granulated sugar, and vanilla extract until smooth. Set aside.
  2. In another bowl, combine remaining egg yolks with heavy cream, milk, and vanilla extract; whisk until blended.
  3. Slice brioche into thick pieces; soak each slice in the egg mixture for about 30 seconds on each side.
  4. Heat a non-stick griddle over medium heat and melt butter; cook soaked brioche slices for about 2-3 minutes on each side until golden brown.
  5. Sprinkle granulated sugar over cooked slices and caramelize using a kitchen torch or under the broiler briefly.
  6. Serve warm with a drizzle of crème anglaise sauce if desired.
