  • 3 tablespoons unsweetened cocoa powder
  • ½ cup sugar
  • ¼ cup brown sugar
  • ¼ cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla
  • ¼ cup sour cream
  • 1 ½ cups grated and strained zucchini
  • ½ cup mini chocolate chips
  • 2 tablespoons brown sugar
  • 2 tablespoon granulated sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch bread pan.
  2. In a small bowl, mix together brown sugar, granulated sugar, and cinnamon for the topping.
  3. In a mixing bowl, whisk together flour, cocoa powder, baking soda, salt, and cinnamon.
  4. In another bowl, beat together sugars and oil until fluffy. Add eggs, vanilla, and sour cream; mix until combined.
  5. Fold in grated zucchini and then gently add the dry ingredients. Finally, fold in mini chocolate chips.
  6. Pour the batter into the prepared pan and sprinkle the topping mixture over it.
  7. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  8. Let it cool for 5–10 minutes before removing from the pan.
