  • 1 Roma tomato, diced
  • 3 tbsp fresh cilantro leaves, chopped

  • Juice of 1 lime

  • 8 egg roll wrappers
  • Olive oil spray

Instructions

  1. In a medium bowl, mash the diced avocados to your desired consistency. Add the red onion, Roma tomato, cilantro, garlic powder, lime juice, salt, and pepper. Mix well until combined.
  2. Place an egg roll wrapper on a clean surface and spoon about two tablespoons of the avocado mixture into the center. Fold in the sides and roll tightly from bottom to top; seal edges with water if necessary.
  3. Preheat your air fryer as per its instructions. Lightly spray each egg roll with olive oil on all sides.
  4. Arrange the egg rolls in a single layer in the air fryer basket and cook at 375°F (190°C) for about 10-12 minutes or until crispy and golden brown.
  5. Allow cooling slightly before serving with your favorite dipping sauces.
