Ingredients

Scale
  • 2 large russet potatoes
  • 1 pound shaved beef
  • 8 slices Cooper Sharp white American cheese (or provolone)
  • 1/4 cup soy sauce
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 cup diced onions
  • 2 tbsp salted butter
  • 1 tbsp sugar
  • 1/2 cup liquid cheese sauce (Cheeze Wiz)

Instructions

  1. Preheat your oven to 425°F.
  2. Poke holes in the potatoes, coat with olive oil, and sprinkle with salt. Bake for about one hour until fork-tender.
  3. Scoop out the insides into a mixing bowl, leaving enough flesh to maintain structure.
  4. Sauté diced onions in butter until softened; add sugar and cook until golden brown.
  5. Marinate shaved beef with onion powder, garlic powder, and soy sauce; cook until browned.
  6. Mix half sautéed onions with cooked beef and top with cheese to melt.
  7. Combine scooped potato flesh with remaining onions and cheese sauce until creamy.
  8. Fill potato skins with the beef mixture and top with mashed potatoes.
  9. Return stuffed potatoes to the oven at 400°F for about 15 minutes until golden brown.
