  • 10 ounces pepper jack cheese (cubed)
  • 1/2 cup mayonnaise
  • 2 sweet onions (chopped)
  • 1 tablespoon Worcestershire Sauce
  • 1/2 lemon (juiced)
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Tony’s Lite Creole Seasoning
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons black pepper
  • 2 teaspoons Tony’s Lite Creole Seasoning
  • 1 bottle Tony’s Creole Style Burger Marinade
  • 2 tablespoons unsalted butter
  • 1 tablespoon salt
  • Toasted buns
  • Colby Jack 3 Pepper Cheese

Instructions

  1. Prepare the Cajun sauce by mixing mayonnaise with Worcestershire sauce, lemon juice, black pepper, garlic powder, smoked paprika, and Cajun seasoning. Refrigerate.
  2. Combine garlic powder, onion powder, smoked paprika, black pepper, and Cajun seasoning in a bowl to create the burger rub.
  3. In a large bowl, mix ground chuck with pepper jack cheese cubes and Cajun marinade. Form into patties and freeze for 20 minutes.
  4. Caramelize chopped onions in butter on medium heat until golden brown.
  5. Smoke the burgers at 250-275°F for 30-40 minutes until they reach an internal temperature of 165°F. Melt Colby Jack cheese on top during the last few minutes.
  6. Assemble by placing patties on toasted buns topped with caramelized onions and Cajun sauce.
