  • 8 ounces linguine pasta
  • 2 tablespoons olive oil
  • 6 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 teaspoon red pepper flakes
  • 1 ¼ pound large shrimp
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cups baby spinach
  • ½ cup parmesan cheese
  • 2 tablespoons parsley (chopped)
  • 1 tablespoon lemon juice

Instructions

  1. Cook the linguine pasta in a large pot of boiling water according to package instructions. Drain and set aside.
  2. In the same pot, heat olive oil and 2 tablespoons of butter over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant.
  3. Add the large shrimp, seasoning with salt and pepper. Cook until they begin to turn pink.
  4. Stir in Italian seasoning, then add baby spinach, cooking until wilted.
  5. Return the cooked pasta to the pot along with the remaining butter, grated parmesan cheese, and chopped parsley. Mix well until combined.
  6. Finish by adding freshly squeezed lemon juice, tossing everything together before serving.
