  • 1 lb ground beef (80/20 fat content)
  • 1 small onion, finely diced
  • 2 garlic cloves, pressed
  • 1/4 cup beef broth
  • 32 oz marinara sauce
  • 15 oz reduced fat ricotta cheese
  • 16 oz low-fat cottage cheese
  • 1 large egg
  • 1 lb mozzarella cheese, shredded (divided)
  • 9 uncooked lasagna noodles

Instructions

  1. In a large deep pan over medium heat, cook ground beef and onion until browned. Add garlic and sauté briefly. Pour in beef broth and simmer until nearly evaporated.
  2. Stir in marinara sauce, sea salt, black pepper, dried thyme, granulated sugar, and parsley; let simmer for another 5 minutes.
  3. In a bowl, mix ricotta cheese, cottage cheese, egg, mozzarella (1 cup), and remaining parsley until well combined.
  4. Lightly oil the slow cooker and layer ingredients: spread marinara sauce at the bottom, add three lasagna noodles, one-third of the meat sauce, three-fourths cup mozzarella cheese, and half of the ricotta mixture. Repeat layers twice more.
  5. Top with remaining meat sauce and mozzarella; pour water around edges. Cover and cook on LOW for about 3½ to 4 hours. Allow to rest for 15 minutes before serving.
