  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 1/4 cup butter
  • 2 garlic cloves (minced)
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup chopped spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3-5 minutes on each side until browned and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add sliced mushrooms and cook until tender. Remove from heat.
  3. Melt butter in the skillet, then add minced garlic and sauté until fragrant. Whisk in flour until thickened, then gradually add chicken broth followed by heavy cream. Stir in grated parmesan cheese, garlic powder, salt, and pepper. Add chopped spinach and let simmer until slightly thickened.
  4. Return chicken and mushrooms to the skillet, stirring to coat in the sauce. Serve hot over pasta or rice.
